- Guinness Pie Recipe

Recipe: Brandon’s Guinness Pie Recipe


  • 1.5kg stewing beef, cut into 1/2 inch pieces
  • 500g bacon pieces
  • 1 tbsp oil Leaves from Sprig of time
  • 2 teaspoons crushed garlic
  • 3 large onion, sliced
  • 1 tbsp butter
  • 2 tbsp Worcestershire sauce
  • 2 tbsp sugar
  • 400ml of Guinness larger
  • 2 cup beef stock 2 blocks
  • (3 large carrots,
  • 1 sweet potatoe,
  • 1/2 butternut,) all peeled and slices
  • 3 to 4 large mushrooms, sliced
  • Salt and freshly ground pepper to taste
  • 2 tbsp cornstarch mixed in a little cold water to thicken.
  • 1 egg, beaten with a fork for puff pastry
  • 3 rolls frozen puff pastry


  1. To start combine beef, 1 can of Guinness, leaves of 3 time sprig, the garlic in a freezer bag, Seal and refrigerate for 24 hours.
  2. Drain the marinade, brown 1,5kg diced chuck steak in hot oil with 500g bacon pieces
  3. Set aside. Cook (in a pot) 3 sliced onions in 2 tbs butter until golden with salt and pepper and add Worcestershire sauce then add diced veggies and beef stock, simmer 30min.
  4. Return meat and juices to pan bring to the boil. Reduce heat, simmer for 2 hours until tender and sauce has thickened.
  5. Preheat oven to 200°C. Spoon beef mixture into eight 250ml ovenproof ramekins. Cut out eight squares of ready-rolled puff pastry to cover. Press firmly onto dishes and seal and patt down the sides. Brush with 1 beaten egg, place on a tray and bake for 10-25 minutes until golden. Freeze uncooked pies, wrapped in plastic then foil. Defrost before cooking.
  6. In a small bowl, combine the 2 tbsp cornstarch with the 1/2 cup of cold water, mixing thoroughly, stir into the filling and cook for 2 – 3 minutes or until thickened.
